  3. Split open English Muffins and toast them in a toaster.

  1. Spread softened butter on both halves of toasted English muffins.
  2. Place a slice of cooked sausage on each English muffin bottom.
  3. Add butter to the same skillet where you cooked the sausage.
  4. Place quart-sized canning lids screw size up (or egg rings) into the skillet.
  5. Spray the canning lids with non-stick spray.
  6. Crack an egg into each of the rings.
  7. Break the yolks with a fork.
  8. Pour water into the skillet and place a lid on top.
  9. Cook until the eggs are set, about two minutes.

  • Cooking for a crowd requires organization. Set your oven to warm and place a baking tray inside to heat up. Keep the sandwich’s components warm in the oven as you continue cooking. Prepare the ingredients in the following order to prevent them from drying out in the oven: the meat, the eggs, and finally, the English muffins.
  • Freeze for up to a month. Cook the egg and sausage and toast the English muffin as usual. Let all the components cool completely. Assemble the sandwich like you always do, except for using unmelted cheese. Wrap each sandwich separately and store them in the freezer. Reheat individually by wrapping the sandwich in a paper towel and defrosting in the microwave at 50 percent power for 60 seconds. Then heat at full power for another minute more.
